Who else LOVES lemon tart? It's a deliciously yummy desert that is pretty easy to whip together, yet looks pretty impressive. Why not treat your next dinner guests or yourself this weekend and whip one up. I promise you won't be disappointed!
NOTE: When I made these tarts I was making several (2 large and 2 small) so the amount of ingredients in the pictures is for more than one!
What you will need:
2 cups almond meal
2 tablespoons melted butter (or coconut oil) plus extra for greasing the pan
30cm tart pan
Grease tart case. Combine melted butter and almond meal. Press almond mixture into tin making sure that the coverage is even. Bake for around 10 minutes or until golden brown.
4/5 lemons juiced (depending on how tart you like it)
185g castor sugar
4/5 eggs depending on size
Whisk eggs and sugar together. Add in cream and lemon juice and whisk until combined.
Pour mixture into cooled tart base and place in a 120 degree oven for around 20/30 minutes or until it only has a slight wobble.
Once it has cooled dust with icing sugar (or not) and enjoy.
