For us here at MonochromeHQ the much loved Anzac bickie is a no go, but thankfully we have found and tested a gluten and dairy free version of these iconic Aussie favs so no one misses out!
What you'll need:
100g gf corn flakes
100g plain gf flour
100g castor sugar
75g dessicated coconut (I didn't have enough so made up the difference with shreded coconut)
1 Tbsp Golden Syrup
1 1/2 tsp Bicarb soda
1. Put all dry ingredients in a bowl and mix together.
2. Melt Nuttelex and golden syrup on the stove.
3. Put bicarb and 2 tbsp boiling water in a small bowl. While it is fizzing add it to the melted Nuttelex and Syrup, it will froth up. Quickly pour it all into the dry ingredients and stir through.
4. Put spoonfuls of the mixture onto a baking tray and flatten out. Put into an oven that is 150 for 10-12 minutes.
5. Make a cuppa and enjoy!
